The name «guacamole» comes from the fusion of two words from the Aztec language — a group of Indian languages in Mexico and El Salvador. Thus, āhuacatl (avocado) and mōlli (salsa or sauce) form the word āhuacamlli, that is, translated into Russian — guacamole. This dish is a thick sauce that can be put on the table as a cold appetizer. What is guacamole made of? Usually from the pulp of an avocado, which is mixed with tomatoes, cilantro, lime juice and other vegetables and seasonings.
How is guacamole prepared?
There are two ways to prepare guacamole. The first one is traditional, the second one is more modern and popular these days.
If we turn to traditions, then cooking guacamole is a whole process using special dishes. The container in which traditionalists prepare guacamole is called molcajetes, a three-legged Mexican mortar made from volcanic rock. It can often be seen in the shape of a pig’s head.
At the beginning of cooking, crush tomatoes, onions, chili peppers in a mortar. They need to be softened to a thick paste. After that, cut the avocado, remove the stone and add the pulp of the avocado to the mortar. At the same time, you need to squeeze lime juice and season it all with chopped coriander. After that, everything is mixed, leaving small pieces of avocado whole, and seasoned with salt. This guacamole is called «guacamole de molcajete». It turns out «lumpy guacamole», in which fresh products are not kneaded to the end.
The second way to prepare the sauce, which is most popular today in the regions of central Mexico, is to boil vegetable physalis, garlic, onion and chili peppers. After all these products are ready, they are combined with avocado pulp and cilantro, and crushed to a paste. This type of guacamole is popular with street vendors in Mexico City and is the one made in restaurants that serve homemade food.
What is guacamole served with?
Guacamole is usually eaten with nachos chips, which are made from masa harina. But lovers of Mexican cuisine prefer this sauce to any snacks and chips, bread. You can use guacamole with meat, cheeses and tacos — this is a corn tortilla. This sauce is very popular with vegetarians and vegans.
What are the benefits of guacamole?
This sauce has beneficial properties thanks to the avocado from which the dish is made. This fruit contains the antioxidant glutathione, which is beneficial in preventing cancer. Copper, iron and vitamin B2 contribute to the normalization of blood circulation, the formation of red blood cells and prevent anemia. Avocados also contain a lot of minerals: potassium, sodium, calcium, phosphorus, manganese and magnesium. In addition, avocados help in the formation of serotonin, the happiness hormone that we all need.
The most famous recipe for guacamole
To make this guacamole sauce, you will need:
— Fresh cilantro (coriander) — ½ bunch
— Garlic — 2 cloves
— Salt — half a teaspoon
— Tomatoes — 1 pc.
— Onion — ½ pc.
— Avocado — 5 pcs.
— Lemon juice — 3 tbsp. l.
Peel the garlic and squeeze it into a cup with a pinch of salt. Finely chop the cilantro, onion and tomato. Cut the avocado in half, remove the pit, and mash the flesh to a puree. Then immediately add the lemon juice (so the sauce does not darken). Mix the resulting puree with the rest of the ingredients and serve immediately. Enjoy your meal!
